You know how I’m no chef. Not into cooking. I cook because I have to, because we have to eat. Anyway I was approached by Arla (a Swedish dairy producer) asking if I’d accept a “box full of magic”. Who says no to that? I didn’t.
I do admit that at first I was a bit disappointed. I was hoping the magic would consist of something I could use to bake with and instead found it to be a box full of healthy (and admittedly quite beautiful) veg.
When trying to figure out how to make my own magic with the contents of the box with my limited skill set I came to think of my new old friend!
So basically I just chopped everything up, added a few curls of butter on top and popped it all in the oven for an hour.
And hey presto! I do love one pot cooking. Kind of magical actually!
That looks yummy! What a good idea for using up the vegetables we're harvesting from the kitchen garden right now - the fridge is starting to get really crowded.
And I love the cute box Arla sent the stuff in!

That's my favourite way to cook - my husband is always astounded because he will potter in the kitchen for hours to achieve something good, but not better than my "thrown-together" dishes LOL!

Box of magic sounds great right about now - I'm dealing with a pretty empty fridge at the moment! I think you did a great job with it. With all the fresh, amazing veggies, it's great that you kept it simple and let the one pot dinner work for you!

what was in the glass bottle? cream? those veggies seem like they would be good with the pasta!
also ... if you eat boring food and want something to liven it up a little that is easy (like i always have baked chicken on hand and it gets a little gross) here is a recipe for parsley pesto and you get to use that parsley in the box too!
you get a blender and put parsley (mostly the leaves, some stems are ok), garlic, olive oil, walnuts, maybe some basil if you have it, the zest and juice of a lemon or 2, and blend it. you don't need a recipe. add spinach or dandelion greens or any mystery ingredient. it's amazing and jazzes up veggies, sandwiches, toast, fish, chicken, anything. i crave it and it's really healthy! we all need a little olive oil in our diet :)

Yum! Here in the french-speaking part of the world we say: "avec du beurre, toute est meilleure!" (everything is better with butter!) It would be even better if Arla made organic, grass-fed cow butter!
